Alpine sushi with dry aged beef and Alpine caviar
Preparation
- Cut the dry aged beef into slices approx. 5 mm thick. Fry the 11er Rösti potatoes, grated, in a pan and toss well. Shape dumplings weighing approx. 20 g by hand.
- Serving suggestion: Arrange the Rösti dumplings on a plate, top each with a slice of dry aged beef and top with Alpine caviar. Finally, garnish with a little chopped garlic chive and serve with wasabi and soy sauce.
