Asian-style potato spaghetti aglio e olio with teriyaki salmon
Preparation
- Potato noodles: Peel and rinse the potatoes and cut into thin endless noodles using a vegetable spiraliser. Mix this with the starch and leave to infuse for about 10 minutes. Steam the potato noodles for approx. 3.5 minutes in a steam cooker or Thermomix with Varoma attachment. In the meantime, lightly sauté the garlic with the remaining ingredients in a pan in vegetable oil and quench with sake. Remove the potato noodles from the steamer and rinse briefly under hot water to prevent them from sticking together. Then add the noodles to the rest of the ingredients in the pan, season and toss with sesame seed oil.
- Teriyaki salmon: For the teriyaki sauce, put all the ingredients in a pan, bring to the boil and thicken with cornflour. Leave the sauce to cool down. Cut the salmon into approx. 3 cm cubes, place in a dish, marinate with the teriyaki sauce and leave to steep in the fridge for about 2 hours. Drain the salmon, collect the sauce, fry lightly in a pan with vegetable oil and cook over a low heat until translucent.
- Roll up the potato noodles with a meat fork and place on plates. Arrange the salmon cubes around the plate, glaze with the remaining teriyaki sauce and sprinkle with roasted sesame seeds. To finish, garnish with spring onions and deep-fried coriander leaves.

Potato noodles:
6 larger potatoes, waxy
2 tbs potato starch or cornflour
1 tbs vegetable oil
4 cloves of garlic, cut into thin slices
2 tsp chilli flakes, dried
1 tsp ginger, freshly grated
4 spring onions, cut into fine rings
1 tomato, deseeded, cut into strips
60 ml sake
Salt, pepper
20 ml sesame seed oil -
Teriyaki salmon:
4 pcs. of salmon, each approx. 180 g
1 tbs vegetable oil
Salt, pepper -
Teriyaki sauce:
8 tbs soy sauce
5 tbs honey
1 tbs brown sugar
2 cloves of garlic, finely chopped
1 tbs ginger, freshly grated
1 tbs lemon juice
1 tbs cornflour
3 tbs water as thickener -
As garnishing:
2 tbs roasted sesame seeds
4 deep-fried coriander leaves
Spring onions, cut into fine rings
