Pumpkin Rösti burger with Styria beef on pumpkin slaw, blue cheese and fried bacon
Preparation
- Pumpkin slaw: Sauté the onions and garlic in a little butter together with the sugar until it caramelises slightly. Add the pumpkin and apples, quench with white wine, add the apple juice and vegetable soup one after the other. Season with salt, pepper and caraway. Stew the pumpkin slowly until soft. Grate the potato into the mixture and continue to simmer over a medium heat until creamy. Remove from the heat and flavour with the pumpkin seed oil.
- Burger patty: Season the minced beef with salt and shape into burger patties. Fry in a pan or on the grill; then place the Österkron slices on the patties and allow them to melt.
- Pumpkin seed Rösti: Prepare the 11er Potato Rösti with Styrian pumpkin seeds according to the instructions on the package or in a turn-over toaster until crispy.
- Sour cream: Mix all the ingredients well with a whisk and chill.
- Surving suggestion: Place the lamb‘s lettuce on four pumpkin seed Rösti and arrange the pumpkin slaw on top. Place the burger patty with the melted cheese on top of this and garnish with the sour cream and fried bacon slices. Finish with a second pumpkin seed Rösti as a cover and serve.

4 slices of bacon, cut into strips, fried -
Pumpkin slaw
Butter for frying
1 onion, finely chopped
1 clove of garlic, finely chopped
1 tbs sugar
800 g pumpkin, grated
3 apples, grated
60 ml white wine
100 ml apple juice
100 ml vegetable soup
1 tsp ground caraway
Salt, pepper
1 potato, uncooked, as thickener
1 tsp pumpkin seed oil -
Burger patty
800 g minced beef
Salt 8 slices of Österkron (blue-veined cheese) -
Sour cream
250 g crème fraîche
250 g sour cream
2 tbs chives, freshly chopped
2 cloves of garlic, finely chopped
Salt, pepper
1 pinch of nutmeg, grated
