Rösti cheese dumplings with brown butter
Preparation
- Toss and defrost the finely grated Rösti Potatoes in a pan. Sauté the onions with the garlic in a little butter, wash the spinach and toss briefly. Put everything together in a bowl and mix with the grey cheese, eggs and potato flakes to form a mouldable mixture, season with salt and pepper. Shape into patties and fry on both sides in a pan with a little oil.
- Serving suggestion: Serve two Rösti cheese dumplings on preheated plates and garnish with brown butter and chives.

Rösti cheese dumplings:
500 g 11er Rösti Potatoes, grated potato
1 tsp butter 1 onion, finely chopped
2 cloves of garlic, finely chopped
150 g leaf spinach
150 g Tyrolean grey cheese, finely grated
2 eggs
50 g potato flakes or breadcrumbs
Salt, pepper
Oil for frying -
As garnishing:
Brown butter
Chives, cut into rings
