Rösti Paella
Preparation
- 1. Rösti paella: Heat the olive oil in a pan and fry the mussels, shrimps, calamari rings and diced chicken breast briefly. Season with salt and pepper. Add the spring onion and garlic and fry briefly. Reduce the heat slightly, add the 11er Rösti Potatoes and sauté.
- Quench the mixture with white wine and toss well. Stir in the saffron and vegetable soup, mix well and toss again. Remove the pan from the heat, stir in the butter and parsley. Season to taste with salt and pepper.
- King prawns: Marinate with olive oil, salt, pepper and garlic and fry or grill in a pan or on the barbecue.
- Serving suggestion: Arrange the Rösti paella on a suitable plate, garnish with a king prawn and serve immediately.

40 ml olive oil
20 mussels, in shells
160 g shrimps
160 g calamari rings
60 g chicken breast, diced
Salt, pepper
40 g spring onions, finely chopped
1 clove of garlic, finely chopped
500 g 11er Rösti Potatoes, grated potato
100 ml white wine
1 g saffron
250 ml vegetable soup, chicken soup or fish stock
40 g butter, cold
Parsley, finely chopped -
King prawns:
4 king prawns
1 tbs olive oil
1 clove of garlic, finely chopped
Salt, pepper
