Rösti shrimp burger with scampi in saor, burger sauce and fried pancetta
Preparation
- Scampi in saor: Clean the Norway lobster, dredge in flour or starch and deep-fry in hot fat. Salt lightly and place in a porcelain dish about 3 - 5 cm high. Top with the sour onions, smooth down and leave to stand in the fridge for 4 hours or overnight.
- Shrimps patty: Coarsely chop the shrimps in a blender, season to taste with the spices and bind with potato flakes. Shape the mixture into 4 patties and fry on both sides in a pan.
- Pancetta: Fry the pancetta slices in the same pan as the shrimp patties until crispy.
- Rösti: Prepare the 11er Rösti homemade style in a contact grill or according to the instructions on the package.
- Serving suggestion: Arrange the chopped lettuce with the burger sauce, shrimp patty and crispy pancetta on a Rösti. Place the scampi in saor and sour onion on top and garnish with fresh cress. Finish off each with a Rösti as a cover.

approx. 12 Norway lobster
1 tbs flour or starch

Fat for deep-frying -
Shrimp patty:
600 g shrimps or small prawns, uncooked
Salt, pepper 2
cloves of garlic, finely chopped
15 g fresh, chopped parsley
Zest of 1 lime
approx. 30 g potato flakes or breadcrumbs
Oil for frying -
As garnishing:
1 bunch of cress
