Caesar salad with crispy garlic Mini Rösti and fried bacon
Preparation
- Caesar salad: Arrange the washed romaine lettuce on plates and garnish with the remaining ingredients.
- Salad dressing: Mix all the ingredients together except for the vegetable oil and season to taste with salt and pepper. Finally, slowly pour in the oil to form a homogeneous dressing.
- Garlic Mini Rösti: Prepare the 11er Mini Rösti in the oven according to the instructions on the package. Meanwhile, foam up the butter in a pan, add the garlic and toss the prepared Mini Rösti with the herbs in it, adding a little more colour if necessary.
- Serving suggestion: Marinate the salad with the dressing and arrange the Mini Rösti on top before serving.

16 slices of bacon, fried
30 g Parmesan shavings
12 Cherry tomatoes, cut in half
4 radishes, cut into slices
12 anchovy fillets

50 ml white balsamic vinegar
70 ml water
2 anchovy fillets
1 clove of garlic, finely chopped
50 g Parmesan, grated
20 g mustard
15 capers
1 egg yolks

28 11er Mini Rösti
1 tsp butter
2 cloves of garlic, finely chopped
2 tbs chopped, fresh herbs: parsley, chervil, thyme, rosemary, sage
